Recipe - Crystal’s Family Recipe for Christmas Pumpkin Rolls

Pumpkin Roll Recipe

This is a Great Holiday Recipe. My mom and I spend an entire day (usually a few weeks before Christmas) baking over 40 of these to give as gifts. They are yummy, and surprisingly not as hard to make as you would think! 

Bread/Cake Roll:
3 eggs - beaten together
1 cup of sugar 
2/3 cup of cooked and puréed pumpkin (or canned)
3/4 cup of self rising flour
(If you don’t have self rising flour then use 3/4 cup of regular flour , 1 tsp of baking powder, 1/2 tsp of salt)
2 tsp of ground cinnamon 
1 tsp of ground ginger
1/2 tsp of ground nutmeg

Beat all ingredients together until you have a creamy batter. Preheat oven to 375 degrees, line a large baking sheet with parchment paper. Poor mixture on top of parchment paper making sure the thin layer of batter is spread evenly and covers entire pan (make sure to try and get the rectangular shape of the pan). Bake for 12 minutes. When you pull it out of the oven remove the parchment paper WITH the cooked loaf sheet still on it! You are going to use the parchment paper to help you Roll the loaf. (This may be really hot on your hands so I use a wash cloth to help me Roll it). While still hot start to roll the loaf (long ways for a thinner roll or short way for the thicker Roll), making sure you Roll the parchment paper WITH the loaf. (The loaf will have to be unrolled once cooled to fill with the cream cheese spread. The parchment paper keeps the loaf from sticking to itself).  Then set it aside to cool (still rolled)! 

While this cools on your counter, start making the cream cheese filling. 

8oz of cream cheese (softened)
1/4 cup of butter or margarine (softened)
1/2 tsp of vanilla extract 
1 cup of powdered sugar

Beat these together until no lumps. 

Once loaf has cooled on counter, slowly unroll the loaf (still leaving the parchment paper on the back of it as you unroll it). Be careful to not  crack the loaf, and if you do it’s ok, the cream cheese will help hold it together). Then spread the cream cheese filling evenly all across the now unrolled loaf sheet. Making sure to get all the turns and corners of the loaf. Then slowly start to roll the loaf, removing the parchment paper as you roll. To make it look extra pretty, cut the ends of the Roll off (I usually eat these as a treat YUM) and sprinkle powdered sugar all Along the top.

A quick TIP: before slicing into pieces freeze the roll. When frozen it is a lot easier to slice. You can then display them on a platter, and they will thaw quickly for guests to enjoy!

Hiking at Wekiwa Springs State Park - 7 Mile Loop

Follow us as we took some friends on their first hike at Wekiwa Springs State Park in Apopka, FL. On this day we did a 7 mile loop, saw deer, went thru fog, and shared lots of laughs! Hope you all enjoy this little video from the hike.

Hiking Bingo

I created these bingo boards as a fun way to entertain the kiddos while on the trail. These boards are made for a more Florida Trail style, but you can trade out different items for something in your area. Such as Palm Fronds, you can trade out with Vines, or another type of tree. I have placed 3 bingo boards below (same images just different order for different players).

Markham Woods MTN Bike Trail - October 14th, 2017

I heard about this trail while at my recent Wekiva Wilderness Trust Meeting. We are made up of volunteers that help promote and maintain the local state parks run by WWT. One of the board members is an avid mountain biker and helps to expand these trails so everyone 
from bikers to hikers can enjoy them. 

The trail can be a little hard to find, in a way. And what I mean by that is that you can pass it very easily. It's located near the soccer fields near Lake Sylvan Park in Lake Mary. The paved Seminole Wekiva Trail actually runs right thru this park, so if you follow the paved trail it'll end up at the entrance of this preserve/park. The park has really nice bathrooms, always clean, a bike wash for your bikes, and even a little repair area with tools!

We started on the the Lokassee Loop then headed to Mitch'd Up, and rounded back to the front part of Gatorback alley (on the left side of Lakosee Loop). The trails are very well maintained, not too wide, only about a single person path. Pos too the natural elements of the property have been left, which I LOVED!!!! There is a road nearby but you only hear it for about 15 minutes before the trail turns and you're back into the woods. On the trail we saw lots of wildflowers in full bloom, sometimes just fields of them. It was magical. Then other times we came across hidden swamps and lakes. Some had flowers on lily pads floating in the water. As you go along the trail get a little more rugged. The Mountain bikers have built hills and valleys in the terrain to make it more interesting of a ride. It also makes for a more challenging and fun hike! I love anything with some elevations, because here in FL we have none, LOL. 

At times you can think your getting lost, but in the end you're not. There are side loops that connect back onto the main trail, and some of them have really pretty hidden meadows and fields of wild flowers! All in all I think this small and little known trail (for hikers) is a true gem. It's definitely a must do and see if you re near by in the area. And don't worry about the mountain bikers running you over. They're all super friendly, love to stop and chat, and always use proper passing etiquette.
